AOC Mont-sur-Rolle Grand Cru, Clos du Couvent, \u00e9lev\u00e9 sur lies, non filtr\u00e9<\/h2>\n

So benannt, da er den M\u00f6nchen der Abtei von Romainm\u00f4tier geh\u00f6rten, das dem Orden von Cluny im Burgund unterstellt war. Es waren diese M\u00f6nche, unerm\u00fcdliche Schaffer, die den Weinberg schufen und ihm sein heutiges Gesicht gaben. Seit der Reformation ist der Clos im Besitz der Familie Rilliet, ein altes Genfer Geschlecht. F\u00fcr diesen Chasselas wurden die alten Reben ausgew\u00e4hlt, auf Lie (auf der Hefe) im Eichenfass ausgebaut, um die Reichhaltigkeit und den ihm eigenen Abgang, zu gew\u00e4hrleisten. Die Lie verhilft zu Nachhaltigkeit, und so lassen wir ihn ein paar Jahre reifen, bevor wir ihn zum Vekauf freigeben. Damit sein Bouquett voll erhalten bleibt, wird er nicht filtriert. Darum sorgf\u00e4ltig dekantieren. Geeignet als Aperitif oder in der Gastronomie.
