That is the grapes are pressed frozen to extract the sugar. (The ice is retained, as sugar thaws faster than water). So you get a sweet juice (must) of a very high sugar content, which then is fermented. Once it has become wine, it is raised in new oak barrels, which gives it this subtle symbiosis between vanilla and the smokey taste of the oak and the characteristic linden taste of the mature Chasselas.<br \/>\nDefinitely a wine to be used in gastronomy.
