Characteristic of the wine
Germagny : a small village near Cluny. From there, a link to the famous monks who founded the region’s vineyards is but a small step…
Owned by the Bercher family, this estate is cultivated by the Maison Blanche team. The area has been free of insecticides since 2018.
Produced in the Germanic style, that’s to say without a second fermentation and with a slight amount of residual sugar; this wine is lively, with however a slight sweetness to give it balance.
Suggested food pairings
Perfect with « sweet and sour » dishes, curries and most savoury food.
Aubonne Clos d’Aspre

Characteristic of the wine
(Also known as Heida or Païen where other names are given to grape varieties)
This cousin of the Traminer originates from Northern Italy, but is similar to the ‘vins jaunes’ from the French Jura. It has found its chalky soil at the Clos d’Aspre. A very small production imparts the distinctive taste which will accentuate with aging.
Suggested food pairings
Magnificent to accompany poultry in ‘vin Jaune’, morel mushrooms, a joint of veal or foie gras.

Characteristic of the wine
Harvested from old Chasselas vines. This wine is barrel matured on lees for twelve months, which makes it full bodied and elegant, with a note of vanilla. The idea stems from winegrowing friends on a visit from Burgundy.
Suggested food pairings
Goes well with seafood starters, poultry, veal, asparagus strong-tasting chesses, but also with desserts.

Elaborated like the Blanc de blancs dry, with the difference that homemade liqueur made of the flowers of the elder tree is added.

Characteristic of the wine
This sweet Viognier is obtained in the same way the famous German eiswein is obtained. That is the grapes are pressed frozen to extract the sugar. (The ice is retained as sugar thaws faster than water). So you get a sweet juice (must) of a very high sugar content, as well as a bouquet with the nose of peaches and apricots typical of the Viognier, but confected.
Suggested food pairings
Its natural high acidity makes it ideal in gastronomy with foie gras, strong cheeses and desserts. Or why not, as a still witness of a special moment such as a romantic tête-à-tête…

AOC Mont-sur-Rolle Grand Cru, Gamay
Its lovely distinct raspberry flavour makes one want to drink this Gamay like a Beaujolais, fresh and young. But it doesn’ reach full maturity before about twelve months’ time.

Goes well with cold cuts and not too strong cheeses. The ideal pick-nick wine.

Characteristic of the wine
The Black Cot but more commonly known by its name originates from the Malbec Cahors vineyards, located between Bordeaux and Toulouse (F). It is a calcareous soil in Aubonne having similarities with its region of origin. A winery moderate and maturation from 12 to 24 months in used barrels bring him a “silky” we do not always know it.

Characteristic of the wine
“the Angels’ Share” A blend of Merlot, Cabernet Franc and Cabernet Sauvignon, these Bordeaux grape varieties flourish against the walls of the estate, thus assuring full maturity for their grapes. This wine, influenced by St Emilion, is cask-matured for 2 years in Bordelaise style. Its structure makes it an excellent wine for laying-down, and in spite of its rarity, it is recommended to let it age another three to four years.

Accompanies red meat, game and why not, dark chocolate.
