AOC Mont-sur-Rolle Grand Cru, Vieux Chasselas doux
This sweet Chasselas is obtained in the same way the famous German eiswein is obtained. That is the grapes are pressed frozen to extract the sugar. (The ice is retained, as sugar thaws faster than water). So you get a sweet juice (must) of a very high sugar content, which then is fermented. Once it has become wine, it is raised in new oak barrels, which gives it this subtle symbiosis between vanilla and the smokey taste of the oak and the characteristic linden taste of the mature Chasselas.
Definitely a wine to be used in gastronomy. But it goes well with old cheese or chocolate dessert.
It will age for a very long time.
To be served at a temperature of 10-11°C.
