Based on Savagnin Blanc, (like ‘vin jaune’ from the French Jura), this wine has stayed veiled (in a partially filled cask where a veil has formed over the wine) for 6 years and 3 months. This prolonged oxidation gives the wine a taste of walnuts …

The golden-amber colour of the Savagnin Jaune Élevé Sous Voile 2018 Mont-sur-Rolle Grand Cru comes from the Clos d’Aspere Aubonne grand cru, where it is organically grown on limestone soils. Harvested by hand, the wine was aged in barrels ‘sous voile’ (under a layer of yeast) for six years and three months to become a Savagnin Jaune.

The oxidative nose is very intense but well-defined and elegant, revealing a discreet touch of oak, accompanied by aromas of apricot, mango, mocha and hazelnut. On the palate, the wine is round, very elegant and refined: it is a full-bodied, intense, sometimes even fiery wine, very long and complex. This Savagnin Jaune with its marked salinity is reminiscent of a fortified wine, with a bitter lemon finish.

Fine tannins and a certain sensation of sweetness, or at least richness, make it an ideal accompaniment to cheese, trout or poultry in a Vin Jaune sauce.

Alcohol content: 13%.
Natural cork. 350 ml bottle.
Serve at a temperature of around 13°C (55°F).
