AOC Mont-sur-Rolle Grand Cru, Clos du Couvent, élevé sur lies, non filtré

It is so called because the vineyard belonged to the monks of the Abbey of Romainmôtier, which depended on the Order of Cluny in Burgundy. They cleared the land and turned it into the vineyards as they still exist. It became the property of the old Geneva family Rilliet at the time of the Reformation and stayed in their possession to the present day. This Chasselas wine was selected from old vines in the Clos and matured on lees in wood barrels, to give it its particular rich flavour and aftertaste. The lees is also an excellent support to help the wine age well. This is the reason why we wait a few years before putting it onto the market. Also, in order to preserve its original flavours, it is not filtered. Which means that it will have be to decanted carefully before serving, as a pre-dinner drink or in gastronomy.
